Continuing with the recent theme on this blog, I took these pictures months ago…In February. When I decided to finally post them, I initially thought they were only a month old. Then I remembered that the last time I bought strawberries was around Valentine’s Day. I wanted to make chocolate covered strawberries, but for some reason I couldn’t get the chocolate to melt right. I still don’t know what went wrong (twice!), but I was then left a whole carton of uneaten strawberries. My confusion and disappointment led to me to forget all about them for a couple of days. Then I had to find something to do with them fast! Quick breads are really my baking go-to (I also posted about this one!). When I have a sudden urge to bake, I usually have enough ingredients on hand to make some bread. I also had a little cream cheese that I wanted to use up, so I looked up recipes for strawberry cream cheese bread. When I saw this recipe pop up, I knew I had to try it. I always find great inspiration there! I was very pleased with how the bread turned out. The recipe was perfect. It was a really nice as a breakfast treat or an after dinner treat. My only regret is that I should have put half in the freezer or something. I had to go out of town for the weekend and by the time I got back it wasn’t so good anymore. Or I guess I just should have eaten it faster!
